To celebrate Yorkshire Day today, I figured I had to really push the boat out. Being so many miles away from my beautiful home county, it seemed only fitting that something purely Yorkshire should emerge from my kitchen today, so everyone else could learn about the delicious dishes that we kick out.

And here it is : the Vegan Parkin recipe!

Gingery, syrupy and light all at once, Parkin is the quintessential Yorkshire baked treat, if you ask me (and apparently if you ask Gemma too!). A favourite in our house on Bonfire Night, this goes beautiful with a proper cup of Yorkshire tea and a viewing of Brassed Off.
