This ice cream is totally decadent, almost ridiculous in fact, and yet bring a little adult taste to this kid’s dream. Pour espresso over it for an affogato and you’ll be in heaven.

Unless you’re from Australia or New Zealand, you may not be aware that today is Anzac Day: the day that both countries honour the members of the Australia and New Zealand Army Corps (ANZAC) who died at the Battle of Gallipoli in the first world war.It’s traditional to make Anzac Biscuits (or cookies, if you must) today, as wives of soldiers used to send these out to the troops, because they didn’t spoil easily. It’s nice way to remember the hardship of those times and keep the memory going.They’re also absolutely delicious, especially if you’re a fan of a good oatmeal biscuit like I am. The Brits amongst you will recoil at the idea of a vegan kedgeree, given that this dish is mostly based around fish, eggs and milk.

However, the British kedgeree is in fact adapted from the Indian comfort food kichiri, which is a fantastic rice and lentils breakfast dish - which is all made in one pot (so there’s less washing up!)
