As promised, here’s a dish that’s full of flavour and packed with healthy ingredients too!

Playing on one of my favourite flavour combinations, this Beetroot and Coconut Soup is the work of just 30-40 minutes. It’s creamy and hearty, and the sweetness of the coconut milk will melt the steely veg-hating heart of even the most difficult child.

Today’s recipe is one of my favourites of the moment. Combining oregano-roasted sweet potato, lettuce, hummus, pesto, red pepper, quinoa and steamed broccoli, this dish is a veritable powerhouse of nutrition! 

It’s also a wonderful mix of colours, tastes and textures, making it a wonderful option for a kid’s lunch box - or an adult’s lunch bag!

Today’s recipe is easy, quick, summery and oh so useful; Vegan Basil Pesto!

This pesto doesn’t need pine nuts. I repeat: You do NOT have to swap your first child for those oh-so-expensive pine nuts for this pesto recipe. Instead, it utilizes the Easy Vegan Parmesan recipe from last week - and if you don’t want to use that, you can just use walnuts.

In just 5 minutes, you’ll have a pesto perfect for pasta, salads or the Herbed Sweet Potato Lunch Bowl coming tomorrow!
